Banana Blossom Fish and Chips

Hey guys!

Here is one of the most amazing new recipes I’ve tried for fish replacement, that I’m eager to experiment with and adapt to some classics. This is a simple ‘fish and chips’ recipe and I have to say… it’s AMAZING! I lived for it.

Ingredients

  • Banana Blossoms (1 can)

  • Dried Seaweed

  • Pickles

  • Capers

  • Salt

  • Pepper

  • Lemon Pepper

  • Turmeric

  • Chilli Flakes

  • Chives

  • White flour (2 cups)

  • Lemon

  • Coconut Oil

So this is extremely easy and I wanted to break it down as simply as I can. I mixed up 1 and a half cups of white flour with a tsp of lemon pepper, 1 tsp of salt, 1 tsp of chives, 1 tsp of pepper, half a tsp of chilli flakes and 2tsp of turmeric for colour, and some dried seaweed crushed up, this bit is up to you but some nori strips just give it a marine flavour. You mix this up with two tbsp of water and you need this to be a gloopy paste, add a tsp of the juice of pickles, and a tsp of the juice from some capers and you have a pretty awesome batter.

So you wash the banana blossoms, dry them and cover them in flour. Then cover them in your batter mix. In a pan, you fill about 3cm of oil, I chose coconut oil but you can use vegetable or anything you fancy and you need to get the oil hot enough so that if you put a spoon full of the batter into the oil, it crisps and goes golden.

The banana blossoms basically take about three minutes to go pretty much crunchy, crispy and golden and when the colour changes, you can pop them onto some tissues to drain of oil, and you’re done!

Serve with limes or lemons and some fries, and voila! SO GOOOD!!!!!
