Chia Cheesecake Pots

 

Hey guys!

So I wanted to use chickpeas as I’m kinda focusing on fun alternatives to eggs and dairy this week, and I wanted to make something that was just super indulgent and fun. I don’t have a lot of sweet things on here so I thought… hmm what can we make? Then I thought about cheesecakes and I was like… maybe I can make something layered? So I made some pineapple chunk cookies. Recipe coming Issue Four.

Then I thought about delicious vegan tasting yogurts, but thought hmm… they’re never quite the thickems texture that I would hope for. So then it dawned on me, a combo of a cheesecake, a chiapot and a yogurt! And here we go!

So this is beyond straight forward and I’m not even gonna list the ingredients. You put in here whatever you like! The basis is just gonna be a base of nuts and crushed up pineapple buscuits, let me tell you this shit was DELISH because of the pineapple with the nuts. Absolutely yes.

Then we mixed up some soy yogurt and chia seeds, I used about two tspn of the seeds and then topped with some frozen berries I had. Left in the fridge overnight? The actual jesus?

This stuff is amazing! Do it with kids or have it with chocolate and coffee for a majorly delicious treat. Let me know if you fancy it!
