Chocolate Creme Brulee

This recipe is by far the simplest thing I’ve ever discovered on the internet for a vegan creme brulee, and I have to say it is amazingly yum!
Ingredients
250ml Coconut Milk
25g Caster Sugar
25g Golden Syrup
25g Corn Flour
Either melted chocolate of your choice, or vanilla essence
25g Brown Sugar for Topping (Or sauce options or both!)
Blend the mixture smoothly, and add some vanilla bean paste or extract. I love the beans so I threw in some seeds straight from one. I then heated the mixture very slowly and before you know it, you’ve got a thick, creamy concoction that weirdly takes no time at all. You have to do this on such a low heat and pay attention to how the mixture thickens because it will grab and you’ll be unready.
I made two batches, one vanilla and one chocolate, so I split i in half. In half I added the warmed melted chocolate and mixed into a gorgeous chocolate alternative.
The next trick is to get the now thicker mixture into the ramekins and let me tell you, it’s gloopy so you have to go slowly. Start pouring them in and leave to set somewhere cool, and you can refrigerate.
To get the crunchy sugar top, you just throw on some brown sugar and I used my favourite new toy, my FLAMETHROWER! You could use a grill but I went with this option.
Another alternative was to treat the mixture more like a mousse, so I added some raspberries and some sugar to a pan, heated them with a dash of vodka and then seived them for a sweet raspberry sauce. It went perfectly with both options. I was less precoius with the chocolate variation because it gave me more of a mousse or ganache with the chocolate mixed in, but equally as delicious.
