Indian Meatballs

I wanted to create a mushroom mince based meatball because I had some that were more so prebought, I wanted to add more to the recipe series and I’ve learnt to appreciate mushrooms aha! This time I’m doing a spicy, spinach base with pink peppercorns and peppers! It’s a take on an Indian recipe but asking dis Baron he wasn’t privy to the style of cooking so I’ll investigate more and edit when I find out what this dish is called.

Ingredients 

  • Mushroom Mince

  • Sage

  • Onion

  • Breadcrumbs

  • Pepper

  • Cumin Seeds

  • Pink Peppercorns

  • Garam Masala

  • Chilli Powder

  • Turmeric

  • Plant-based Butter

  • Peppers (red/yellow)

  • Spinach

  • Tomato Puree

So the first part is cooking out the white onion, you chop it up and maybe seven white mushrooms, I used closed caps and I always peel them because they make me feel funny. For the flavour, I wanted to create a sage and onion vibe which isn’t conventional, I don’t care. You cook them out til brown in a pot, season to your taste and at about a tsp of black pepper, sage, thyme. I used dry and they’re more intense so if you want fresh double the amount. I cooked out til soft, it took about twenty minutes for me and then I added two tbsp of panko breadcrumbs (pictured two sections below). I used my hand blender to mix up and set aside to cook, you can use something like chickpea flour and water to act as an egg replacement but the mushrooms took to the mixture well and I didn’t need any.

Roll out the cooled meatball mixture onto a greased pan and pop into the oven on 200 for about 20 minutes.

In a new pan, chop up half a white onion, a small orange pepper, a small red pepper and chop up to a fine mix. and add some garam masala, chilli powder, thyme, black pepper, cumin, turmeric, pink peppercorns, and begin to a cookout. The aroma is amazing so when it’s been softened, add about two tbsp of tomato puree, a cup of water and reduce to low heat.

When the meatballs are cooked, add them to your sauce dish and throw in some washed spinach. You can serve with rice of your choice, some naan or whatever you fancy!
