Onion Crisps + Pulled Pork Porkless Sliders with Jackfruit

Here is a totally easy and delectable pulled pork type burger or sandwich, let me know what you think as it’s really simple but has some cool flavor alternatives to my previous burger one!
Ingredients
Shallot
Toasted Sesame Oil
Jackfruit or Pulled Pork alternatives (Linda McCartney)
Pink Peppercorns
Liquid Smoke
Onion Salt
Garlic Salt
Soy Sauce
Chipotle Chilli Flakes
Vegan Cheese (Mozarella)
Tomato Puree
White Sweet Onions
Chick Pea Flour
White Flour
Almond Milk
Breadcrumbs
Garnish of your Choice - Rocket, Coleslaw, Potato Salad
So the idea behind this was that I was looking at American how-to videos on Facebook that were in my feed, and they kept having this sort of mad chicken burger that was like all kinds of pulled pork like? Is it called slow-cooked chicken if it’s like that? I have no idea, she doesn’t eat the poultry. Anyway, I thought it might be fun to do a jackfruit recipe for YOU guys out there since I think it’s actually too close in texture to how I imagine meat and I do not enjoy it at all, but hey. Jack to the fruit.
I started with shallots in toasted sesame oil, this is just an oil that gives smokey extra to the sweetness of the shallots. Then add some garlic powder, onion powder, seasoning, and some pink peppercorns. Temper the oil with the pink peppercorns before you start if you want that flavour to be more pronounced. I had bought precooked jackfruit that I added already in the pulled texture but it comes in a variety of different forms, basically you have to work out what you want the texture to be because you need to boil the internal pod-like bits for about an hour to then pull apart and use in your recipes in place of a chicken or a pulled pork.
I added light soy sauce and chipotle flakes to the pan then added the prepared jackfruit and added a little more oil. I wanted to keep the mixture sort of more stable than just falling apart in the bun so I then added a mixture of tomato puree with some melty mozzarella from Sheese. It just binds it a little and adds more texture and flavour.
So I thought homemade onion fritters would be a cool addition to go in it as it would give a bite to the chewy meaty pulled ness of the jackfruit, so I sliced up a white onion and set aside. If you want to take out some of the onion-ness, you could steam the rings before you do this and set aside as it would be more like an onion ring, but I like that bite in contrast to the rest of the sandwich. Then prepare half a cup chickpea flour with half a cup almond milk, throw in some salt and some bicarb if you want, I didn’t but it can help a little. whip up that gooey egg mixture.
Add flour to the onion rings, then into the egg batter, then into any type of breadcrumb you wanna make. I had some leftover from making a katsu I believe, so I used those. Get the oil hot, I didn’t want them to be deep-fried as much as that toasted dry texture so I just heated the oil in a regular pan and threw them in. Cooked them in the batter for a few minutes until they went golden brown. Next I transferred them to a pan on some baking foil so I could roast them a little bit more and get that smokey flavour, so added sesame oil again and popped them in to soften for about twenty minutes on 150.
Next is the assembly, I made some coleslaw with vegan mayo and it’s not too dissimilar to my potato salad recipe, but I used prebought ingredients pahah. Add some garnish, some buns, and I used brioche as I think it’s soft enough to go with the other textures. Maybe some relish would be great.
