Raw Poki Tuna Bowl

I wanted to create a new version of my tuna watermelon steak as it was super popular when I shared it, but I also wanted to create something that was a bit more of a cold alternative as you can really use watermelon to replace tuna as a hot or cold ingredient. This poki bowl is super nutritious and flavoursome, and I tried a new jackfruit recipe to add to it which was the perfect side. I’ll add that one later.
Ingredients
Purple broccoli (200g)
2 cup white basmati rice
1 watermelon
Sesame seeds
Mustard seeds
Black peppercorns
Chia seeds
Sweet chilli sauce
White wine vinegar
Mirin
Light soy sauce
Red chilli peppers
So the first and easiest things to start with are creating the base with the basmati rice. I am not an expert rice cook so I don’t want to go into two much details about it but I wash the rice to start with, then I add double the water to the rice and boil, then I literally watch it until it’s soft enough to eat. I normally give it 20 minutes because whatever I seem to do it never seems to cook as recommended by the packet haha! So do whatever you feel is appropriate.
In a second pan, bring some washed broccoli stalks to the boil and simmer until they are soft. Tenderstem or purple broccoli are so easy to get now days and they look like green flowers so I love them.
The next part is the watermelon, which you can chop into about 2cm slices. Try and deseed them as this can ruin the effect, and slowly slice ‘fish like’ slithers in them. In a pain of vegetable oil, I added 3tsp of sesame seeds, 1tsp mustard seeds, 1tsp crushed peppercorns and heated til they started to pop. Pay attention as you don’t want them to burn. Then add 2tsp soy sauce, 1tsp sweet chilli sauce, 1tsp mirin, 1tsp white wine vinegar and create a sauce. Add the watermelon and coat with the seeds, and bring right down to a very low simmer for about 20 minutes.
I added some chia seeds, white wine vinegar and salt to my drained rice, and added my broccoli to a bowl. I then topped with the watermelon steaks and added some cute chilli flowers to give some decoration, but you don’t have to. It’s super easy and tastes amazing cold and hot, so let me know how you get on!
In the main photo I added avocado, some carrot, some jackfruit on the side and some lime, but to keep it easy just go with what you fancy. The more goodies the better!
