Rainbow Ramen Stir Fry
Hey everyone! I'm currently listening to the Katya and Craig podcast whilst finishing off this blog and I'm totally in a food coma from how delicious this was. It was bomb dot the com.
So for this week, I am bringing you my second Asian inspired dish. I thought about my favourite types of food visually and I kept on coming back to a ramen bowl full of different vegetables and bits. I kept thinking about how many times I've been served the vegan version with very little flavour to it, there's normally a broth that these mildly fried vegetables float in and you have to either load on the hotsauce to get a kick out of it or there's an egg, which I've omitted from my recipes.
What I wanted to create was the same concept as a rainbow bowl, like a mixture of delicious, fresh and multi-coloured vegetables with some noodles, with a hell of a lot of spice that you guys can either leave out or add as you wish, so here's what I came up with!

Purple Scallions
Purple Sprouting Brocolli

Large Rice Noodles
Mirin
Soy Sauce
Chilli Powder
Rice Vinegar
So let's start off by lining your pan with all the vegetables you wanna add! I chose a range that had multiple colours, some of these were left over from other recipes I have coming this week and some were bits I chose to add for this.
You can serve these from the dish and people can take what they like which is the beauty of them!
So I kept on thinking about what my family order when they get a takeaway and I thought, that's the part that's missing, that keeps it towards the healthy plain side. How do we make this more of a naughty food, and I came up with some fried tofu! Crispy fried tofu can substitute for crispy fried beef, so all I did was keep it moving in the oil until it garnered a golden texture to it, set aside on some tissue to drain, added some honey, liquid smoke, vinegar, tomato puree and let it cook in the heat still left from frying. It is so easy and just gives some texture later on!
Next I wanted to make some super hot spicy noodles, so I combined garlic, olive oil, ginger about a tsp of each finely chopped, with olive oil. Then added two tbsp of rice vinegar, one of mirin and two of tomato puree. a tsp of onion salt, a tsp of chilli and two red chillis finely chopped. I then cooked out until it sweetened and added some fresh rice noodles. These take three minutes to cook through.
In the main pan I drizzled in sesame oil, this is normally used to flavour dishes after but I like the aroma it gives everything whilst it's cooking. Then when it's starting to cook through and crisp, I added a splash of water throughout the dish so it begins to steam through. Once the waters evaporated you're good to serve! It takes maybe ten minutes in total aha!
So here is the finished meal, serve how you feel and add some fresh coriander to taste. It is SO delicious so I hope you guys all enjoy it and try it out at home!
