Cyan Brighton at the Grand

I had the opportunity to visit my friend at the Grand Brighton which is excellent for a weekend stay, and I wanted to check out the new restaurant the Cyan.
The restaurant is on the right side of the foyer into the Grand, and it is pretty much a swanky set up. It’s very enclosed and it felt cosy with different features and rooms. I was really interested in the massive installations as I had read the interiors were by architect team Space. The images were huge illuminated close ups of plastic waste and fishing debris in the sea. I thought they were amazing images and they really brought attention to a cause close to my heart. I know that on the website they are focused on recycling and team up with a Brighton team called Weez & Merl on some of their decor, so it was an interesting vibe that I enjoyed.
The food is really focused on the sea and sustainable, local sources which is fab. I don’t eat things that have eyes, so I didn’t get a massive option during the Lockdown’s limited menu so I chose to get basically three types of cauliflower. One was a cauliflower cheese, one was a romanesco and the other was a salad, with a delicious green herb dressing and roasted cauliflower steak.
It was lovely! I can’t complain about the quality of the food, the best part was the range of amazing cocktails which I lived for. I had lots of gin based options and a pineapple thing, they were made for me by the suggestions of the staff who were also decked out in Gretchen Blake ensembles.
For anyone looking for a sustainable and intimate dining experience in Brighton, particularly for meat and fish eaters, I’d say that this is one to try. For the vegetarians and the plant based eaters like me, I would say in a normal set up it would be exciting to try their options whether staying at the Grande or not. It was a fun one to hang out at and I wanna go back when the lockdown lifts.
