Here is my review in the moment of the fabulous Etch by Steven Edwards. I was invited to pop in and try the tasting menu, which was outrageously yum!
Kombucha alcohol free made locally
Mine was wine but I didn’t drink it, it was paired with the meal
Cheese biscuit with lots of cheese and a tiny toasted bread bite with mushrooms and cream cheese and truffle on top
Marmite bread was so soft in the middle and didn’t taste like marmite
Soup was Broad beans asparagus mouse with tiny bean slithers at the bottom and fennel on top and cream
Wafer full of creamy sweet fennel pickle jam with pollen on top - second
Artichoke purée, poached, crispy and pickled with chive oil and white and red tomatoes with no skin, cress, basil oil and onion infused cream. Was like monster munch pickled onion crisps - fav so far
Horseradish ice cream whipped feta, Beetroot pickled beetroot horse radish, beetroot jelly, star of beetroot, walnut brittle, powder on top? Mayo with cubed beetroot on bottom, whipped feta under Meath the white pickled beetroot, the ice cream is like real ice cream and the pickled bits? The best part is the bottom cubed pieces in the mayo that would be amazing as a side dish - 3rd
62degrees duck egg yolk nasturtium oils and leaves crispy onion toasted brioche jersey cream, lightly pickled fennel under. It wasn’t my favourite thing ever it was like a bit too small the brioche to go with the egg and it wasn’t substantial enough to use the fork. But was super comforting and pleasant. The oil was sweet and subtle and green. It was warm and nice but not like super delicious
Onion thyme, Sheep’s yogurt sauce courgette tempura onion sauce puréed courgette wellington , spearmint in the pastry, short crust, mushroom stuffing, sweet very very herby. Plains courgette piece and sweet mint sauce like mint jelly. Sheep’s yogurt is very thin and yoghurt and astringent. Purée and the little discs are delicious. Caramelised onion sauce very delicate not like gravy it’s sweeter. Puff and short pastry in layers, puff on inside and short on outside. Mushroom and sweet sweet onion stuffing. Wild garlic leaks. Nigella seeds on outside. I’m stuffed! Third best so far. Plates arrive hot.
Chocolate guinoir chocolate, 70% coco oaky bitter, cheese cake mouse at base, cherries, maraschino cherry ice cream and cherry. reduction coco. They melt the sawdust but down and it becomes the deists. It’s pea shoot flowers, morello poached. Highest percentage chocolate shape things are like incredible creamy rich dark chocolate, the saw dust bit is like unrefined dark chocolate chunks. The brittle bit stuck in my teeth it’s dark chocolate brittle. Tiny Biscuity crumbles on the base. Most delicious pudding ever. Guanaja. Roman in France single origin
Clotted cream sphere with strawberry jelly, strawberries, elderflower, pollen, sorbet. The brittle is so light and dissolves like toffee apple purée. The jelly is more of a fruit sweet roll jelly around amazing clotted cream. The strawberries are so fresh and gorgeous. Be pollen scone crumbled underneath. Micro greens on top. It was amazing I liked them both.
