Carrot Salad + Easy Vegan Mayonnaise

So I wanted to show you a way to make vegan mayonnaise from chickpeas, as this is such an unknown technique to replace eggs and it is super easy to do. I thought up different ways to make a salad interesting and roasted carrots were the tea. So check it out here and let me know what you think of the new video.

Ingredients

  • Carrots

  • Chickpeas

  • Rapeseed Oil

  • Vegetable Oil

  • White Vinegar

  • White Pepper

  • Salt

  • Flavouring of your choice - Tahini, Chives

  • Sultanas

  • Black pepper

  • Mixed Salad Leaves - Spinach, Rocket

  • Chia Seeds

So the first thing you need to do is set aside how many carrots you think would be great for your serving, I used five or so and sliced them down the middle. Parboil them for ten minutes and roast then for another fifteen in vegetable oil. The next thing you do is create the mayonnaise which is the focus. You start off with three tbsp of chickpea water, this stuff synthesises egg whites and you need enough to hold the base of the mayo. Next, add two tsp of vegetable oil, one of rapeseed oil for flavour. Don’t use olive or anything distinct as it’s gonna overpower the bases. Add white pepper, salt and a tbsp of vinegar. Whiz this up with a hand blender for about five minutes, or a table blender for two. The result will be a creamy mayo. Adjust the vinegar for the type of thickness you want and a touch of mustard for flavour.

I wanted to create a lighter dressing so I made the texture as close to what I liked as possible by adding more white wine vinegar, I then added black pepper and chives and it came out amazing. I washed and prepped the salad leaves and added some tahini, and we’ve got a star salad ready to assemble.

So here we go! Here is the final salad and it is absolutely delicious, super easy and you can use the mayonnaise recipe for sauces, dips, dressings, and more. Note - DO NOT use any type of random flower in your salad, get edible ones specifically chosen for a garnish. It’s so yummy, a mix of tahini and mayonnaise vinegarette.
