Chocolate BBQ Sauce

I wanted to share with you how to make a really intense BBQ sauce in not just a dairy-free way, because you can get loads of those, but to control the amount of sugar. Most bbq sauces and sweet chill sauces are literally syrups made of sugar and vinegar, and if you’re keto or aware of what you’re putting on your stuff, this is how to go forward!
Ingredients
Garlic
White Onion
Demerara Sugar
Cumin Seeds
Peppercorns
Paprika
Smoked Paprika
Chilli Powder
Mustard
Thyme
Soy Sauce
White Vinegar
Balsamic Vinegar
Tomato Puree
Tomato Passata
Frozen Cherries/Blueberries
Espresso Coffee
Raw Cocoa
So the fundamental thing here, is to create a base because we’re layering ingredients as we go. This one isn’t super spicy at all it’s more so an intense BBQ that goes with chilli’s, as a dipping sauce, on a burger. Whatever! It’s not a hot sauce but you could substitute the things like the brown sugar, the chocolate and coffee with some white sugar and chillis and make one with ease. You roast some cloves of garlic in the oven to begin with, and that takes about 30 minutes to soften.
Chop up a small white onion and add to a pan with vegetable oil. Then add salt and pepper, about a tsp of each.Began by melting 1 large tbsp of demerara sugar into the onions, it will bubble up and turn to a dark sticky liquid and you may need to add water to keep it from drying out. Turn the heat to low and start adding a tsp cumin seeds, one of mustard, one of paprika, one of smoked paprika, one of dried thyme, one of chilli powder, then add two tbsp of balsamic vinegar, one of white vinegar. Turn the heatup untilit’s bubbling, add a tbsp of passata, two of tomato puree and a handful of frozen tart berries. I wanteda tart note, so if you wanted to skip this, you could add a tsp of horseradish or something like a tbsp of pineapple juice.
Next you add your cocoa, I used Cacau Bliss from Earth Echo because I love the health benefits, a tbsp is great. You can test out the consistency and I found mine was a bit sticky so I added a cup full of water so the sauce keeps bubbling away. Now you have to do the hard part, which is cover the pan and leave on a low heat until the liquid has evaporated. You’re going to want to wait until things have really broken down. Get your roasted garlic, remove the peel, and add to the pot.
Next, you prepare yourself a shot of your favorite espresso, this is to add a bitter element to it. Blend the sauce you have with a hand blender until smooth and add the espresso. Return to the stove to cook out and you should have something that resembles this amazing sauce! Just leave to cool, and you’ve got one of the most gorgeous BBQ sauces ever. For dips, Marinades, cooking bases, it’s really grounded and definitely would recommend.
