Doughnut Desserts + Clementine Cocktails

I had some amazing clementines leftover and I thought about ways I could turn them into something yummy for Agitprop, and I came up with the idea of doing a sharable romantic desert - I know we’re in lockdown, it’s not great. But I wanted to do a candied orange base, with some delicious vegan doughnuts, kind of mini-ed and then finished with some delicious coconut yogurt. It was just a mad combo that worked with a cinnamon stick and some mint, finished like a cocktail!

Ingredients

  • Clementines

  • 3 tbsp Brown Sugar

  • Nutmeg

  • Cloves

  • Cinnamon Dried + Stick

  • Vanilla Extract

  • Allspice

  • 1 cup Orange Juice (Pressed)

  • 2 cup Flour

  • 1/2 cup White Sugar

  • 1/2 cup Plant-based Butter

  • 1 tsp salt

  • 1 tsp baking soda

  • Vegetable oil for frying

So we begin with a brown sugar and water mix, it’s the starting point to the caramel, make sure the sugar is dissolved and bring to the boil. Simmer and then add the orange juice, then the oranges and cinnamon, I also added vanilla, cloves, nutmeg and allspice for a full mix. Poach them on a steady bubble for about ten minutes, and then flip them upside down and repeat. If the caramel cooks off, don’t be fearful to add more juice. You could add some alcohol like rum. Set aside to cool.

Next, we’re melting the butter for the doughnuts, melting some plant-based butter in a pan. In a separate bowl we add the flour, I had to use up my white flour in a bread recipe so I used buckwheat to try, it’s not ideal but it’s a different colour in the photos than usual so use what you have. You basically have sugar, flour, baking soda, and salt, and you make a well to which you slowly add your melted butter.

As you mix up, you result in a very nice dough, if it’s too wet, you overdid the flour. Next, prepare your pan for frying, so get some unflavoured oil and heat it for about 3-5 minutes, test a mini doughnut out to see what happens, if it’s hot enough it will brown on all sides and you’ll get a delicious bite. If it’s not hot enough it will cook slower and potentially burn, so have fun, brown some mini test ones and then set aside on some tissues to drain.

You can obviously make these doughnuts on their own but I used them in the base of the cocktail, with the oranges. So easy, you pop the doughnuts in your cocktail bowl or glass, add some of the juice of the oranges, then the oranges, then some delicious yogurt, some cinnamon and I added a cinnamon stick for fun!
