Quorn Fish Scampi Fajitas with Cucumber Salad

I was on a hunt this year to look into fish alternatives, and I had no idea Quorn did these things called Scampi which I had never heard of. My mum said they’re like chicken nuggets with fish in, and I was like… yuck? But I investigated and these are like softer, lightly flavoured breaded bites of protein, they just taste great.
I wanted to do a wrap alternative and thought this went together so well. The cucumber bit takes longer so start with that, but yum!!!
Ingredients
Pickled red cabbage (4dsp)
1 White Onion (diced)
Paprika
Cajun Pepper
Onion Powder
Nutritional yeast
Chilli Powder
Garlic Powder
Quorn Scampi Bites
Lemon
Wheat Wraps
This is so easy and uses pickled red cabbage, with the vinegar. Throw that in with the onions and it almost caramelises and cook out together for a base. Add in a tsp of all the spices to your taste, and bump up the chilli if you like. Add some lemon grind and a squeeze of lemon juice to really glue everything together. This is the easiest, simplest base for the scampi. Then add the cooked out scampi which I baked for 20 minutes on 200 degrees C, and it all comes together!

8 Mini Cucumbers
Alpro Yogurt
Chives
Onion Powder
Dijon Mustard
Salt
White Wine Vinegar
So the idea behind this side was to give a cool and creamy alternative to go with the wraps, and I found these gorgeous mini cucumbers in my local grocers and thought I’d try them out. I used the side of my grater that looks like a beheading thing, and slithered them down into slices. The next thing is to cover them in about 3tsp of salt and leave for at least an hour in the fridge. So prep these before, the salt pulls out so much water you’ll be shocked, but it changes the flavour to another level.
When they’re ready, pat them dry and in a separate bowl mix some vegan yogurt. I used about a cup of plain yogurt by alpro and a tbsp white wine vinegar, 2tbsp dried chives and 1tbs of onion powder. I then added a spoon of dijon mustard and stirred, if it wasn’t thin enough add a tiny bit more vinegar. Combine and they’re such a yummy salad and perfect for summer dishes as an accompaniment or inside a wrap like this.
These are so delicious and the cool cucumber salad with the texture of the scampi is amazing, serve with some lemon slices, maybe some hot sauce if you fancy, and I certainly did outside of this photo haha!!!! But add all together and it’s a great alternative for a wrap.
