Vodka Beans and Potatoes

I wanted to share some of my favourite Mediterranean dishes by mixing up a gorgeous range of tapas, including this vodka sauce covered potatoes and beans, which go great as a side or as a bowl of tasty treats!
Ingredients
2dsp vodka
5tsp tomato puree
1tsp paprika
1tsp dried chives
1tsp rosemary
1tsp onion powder
1tsp peppercorns
1 can broad beans
2 cups parboiled new potatoes
This is super easy recipe because you prepare two different components and you combine them at the end to cook down, so it’s super easy. Parboil some sliced up potatoes for about 10 minutes, they are super quick to cook so pay attention as you wanted them to hold their shape. Then in a baking tray cook add some drained beans, peppercorns, and a splash of olive oil and cook on 180 degrees C for 20 minutes.
I had cooked out some onions and wanted some left over so I used the same dish, and added puree, the spices listed above and then the vodka. It will bubble, so cook out and then turn down to a simmer. Add some water until you get a delicious sauce, and whilst the potatoes are cooking continue to reduce down. It’s such a strong and amazing flavour and definitely something you could mix into a pasta dish or many others.
Cook down until the mixture becomes sticky and soft, it’s delicious and a phenomenal flavour that goes great as a side dish. I decided to serve up with all the other dishes which included stuffed peppers, paldino peppers, green olives, tofu quiche and more!
