Creamy Vegan Guacamole

 

Hey everyone!

I wanted to bring an easy guacamole style dip to accompany other bits on here, and I love fresh avocado but I think this is a little bit extra so I hope you try and enjoy.

Ingredients 

  • Avocado

  • Red Chilli

  • Baby Tomatoes

  • Lime

  • Cilantro

  • Red Onion

  • Garlic Cream Cheese Substitute

  • White vinegar

  • Salt

  • Pepper

  • Chipotle

So it’s not rocket science, you basically want to juice a couple of limes, smash a couple of avocados. Combine, it stops them from going brown. Mash to your desired texture, puree if you wish.

Next, dice up some of the tomatoes, add some salt to the diced tomatoes straight away as I always like to season them as soon as this step because it grabs the liquid. I love chillis, I added chipotle flakes and sliced little chillis and half a red onion. Combine.

Throw in a healthy dollop of vegan cream cheese, this one is from Tesco here in the UK and has a really delicious texture to it. It’s very cheese-like and it gives that extra garlic taste that’s perfect for guac. Then add a splash of white vinegar, combine and season to taste!
