Vegan Meatball - Subway Sandwiches

So continuing my series of Veganuary alternatives, I wanted to show you how to make a meatball from scratch but in a slightly different way to the previous recipe. This time I wanted to focus on the Subway Marinara Sandwich, but since I don’t love eating carbs I mixed it with some greens for a super yummy snack.

Ingredients 

  • Mushroom Mince (Or closed cap mushrooms chopped up)

  • Brown Bread

  • Vegan Cheese

  • Cumin

  • Chili Flakes

  • Flour

  • Scallions

  • Chia Seeds

  • Plant Milk

  • Salt

  • Pink Peppercorns

  • Sugar

  • Rice Vinegar

  • Brocolli

It’s super simple, but you basically combine the mushroom mince with some broken up brown toast, this binds together super well and you don’t need to worry about running out of breadcrumbs, which somehow happens to me every time I need them.

I added some vegan cheese to give some salty flavor, cumin, chili flakes, some tomato sauce, and a little ginger as I wanted this to go with a sweeter sauce. Cook in the pan for at least ten minutes, set aside to cool. Mix your dessert spoon of chia seeds, 1 cup of plant milk and set aside for 25 minutes to create the binder. Add half a cup of flour, slowly add your chia replacement until the texture forms a dry, doughy ball. You won’t need the full amount.

Grease a baking tray or add some foil, roll into balls and pop into the oven at 200C.

These take probably about twenty minutes to cook but keep an eye on them because they can dry. What I tend to do is lift each ball off of the tray after about ten minutes to stop them sticking, as this can encourage them to burn and the texture to change.

So the sauce was majorly simple, just adding pink peppercorns, scallions, salt, a white onion, and some rice vinegar together. Just an easy glaze to serve over your broccoli, which I had parboiled to serve!

Talking to the Baron who hates meat and meat replacements, I wanted to try and see if I could create a pan Asian inspired vegetable-based alternative and what I managed to do was combine chickpeas, carrots, and peas. They worked really well but took a little bit more binding. So mix up the same but add twice as much of the chia liquidi and you’ll be fine. Sort of a crunchier falafel.
