Salad Nicoise (Jackfruit)

One of my family favourites has been a Salad Nicoise which I’ve never really been able to try! Mostly because I assumed it was pretty much a flavorness arrangement of things if you can’t really eat the tuna, which obviously as someone who doesn’t eat fish didn’t sound too appealing. But with the introduction of jackfruit I’ve been able to make a pretty easy, plant based alternative which feels filling and has a totally delicious dressing.

Ingredients

  • New Potatoes

  • Green Beans

  • White Onion

  • Rocket (or alternative leaf of your choice)

  • Cherry Tomatoes

  • Tuna

  • Vegan Honey

  • Olive Oil

  • Pepper

  • Salt

  • Parsley

  • Black Olives

  • Mustard

  • Balsamic Vinegar (White wine vinegar)

  • Chives

  • Jackfruit

  • Vegan Yogurt

  • Paprika

  • Nori

  • Beetroot Juice

So the simplest thing to do, is prep the vegetables you want to use. You can add as much as you like my classically this salad has green beans, which I diced up and boiled for about 8 minutes til they were soft. New potatoes, which take maybe 15 minutes when diced. Wash and oil these on your hub in salted water, you start off with a bubble and then reduce to a simmer so it’s easy peasy. I do this about half an hour before I start on the next part, because I want the veg to cool off. You can have it warm if you like, but it’s just as nice cold.

Next you want to create some dressing, I used 7tbsp of olive oil, you can use balsamic vinegar but actually in this recipe I used a white wine vinegar which was sweeter. But it’s up to you, you need 5tbsp. A tbsp of parsley, 1 of chives, half of mustard, half of pepper, half of salt, and half of a finely diced white onions. I added some vegan honey which I thought went well, and this was also an amazing dressing for some crusty bread that we had left over.

Next you need to prepare the jackfruit, now this is a simple one too. You get some jackfruit in brine, it comes pretty much as is, you drain the brine and add a dspn of vegan yogurt. I don’t like alpro but if you can’t find anything, it’ll do fine. Then add a tsp of paprika, a tsp of crushed up seaweed and some salt, pepper and a splash of vinegar. If you want it to look more like tuna, you can use juice from a beetroot. This is pretty much the tuna part done.

Next wash some salad leaves, I had some rocket, and some cherry tomatoes. I added some black olives I had from my local deli, drained the potatoes and green beans which were now cool and arranged on the plate as I wanted! I covered the greens with the dressing and it was absolutely delicious. I made the same salad for my mum with real tuna below and I had some ciabatta I had made, so you can do any type of mix you like!
