Summer Fruits Lattice

Hey everyone! I wanted to create this recipe but I thought it was honestly too simple to share with you because it's not that much cooking lol! It's more like an assembly of delicious things, but I wanted to add it as it finished the trio of desserts off nicely! It wasn't a cake, it was something that I remember my grandparents baking as a kid, and it's so easy.

So really let's get to it! Pick some berries of your choice, I'm not gonna give you an ingredient list because this is totally up to you. I had some berries from my garden, some from the local field that holds blackberries and some cranberries. Loosely boil them in lemon juice, just a squirt. Then add about four tbsp of icing sugar. If you feel the juice is appearing, sift in a couple of tbsp of flour. Easy peasy, how sour you want it to be is up to you!

Next, I grabbed some simple, ready made vegan puff pastry. In the same way I created in the Stargazey Pie recipe. It's a cheat, and I have a second recipe coming for pastry next. I assembled it like so, I sliced the sheet of pastry off that filled my pan. I added coconut oil and baking paper so it wouldn't stick. I then put two second slices down the sides of the pastry and covered in a mixture of linseed oil, water and bicarb. it works like a glue. Then sliced the remaining pastry in half, then in half, and had those quarters then sliced into three. You're left with twelve latices. You just assemble like so and cut to shape.

I added it into the oven with some of that linseed mix, for about 15 minutes. My oven cooked super quickly on 180. I then grabbed some soy yogurt with blueberry, and added some sauce that was left over and served!
